This zesty frosé starts with a homemade, fruity, and fragrant strawberry simple syrup made with fresh strawberries. Combined with a floral rosé and a splash of tart lemon juice, it all adds up to a boozy yet balanced and elegant slushy. You'll want to keep your freezer stocked with this frosé to keep you refreshed all summer long. The strawberry simple syrup keeps the slushy smooth, not icy. It isn't just delicious in this frosé, either — try it in other cocktails and mocktails, drizzle the pink syrup over fresh fruit salad, or brush it over layers of cooled cake before frosting to add a rosy hue and luscious sweetness.

In a small saucepan, bring sugar and 1 cup plus 2 tablespoons water to a boil; simmer until the sugar is dissolved, about 3 minutes. Remove from heat, and let cool completely.

Process strawberries and 1 cup plus 2 tablespoons simple syrup in a blender until smooth, about 1 minute. Pour syrup through a fine wire-mesh strainer into a measuring cup; discard solids.

Combine rosé, lemon juice, tequila and 1 cup plus 2 tablespoons strawberry simple syrup in a large freezer-safe container; stir to combine. Cover and freeze until almost solid (mixture won't freeze completely because of the alcohol), at least 6 hours or up to 10 hours, stirring mixture once every hour. Reserve remaining strawberry simple syrup for another use.

Remove from freezer. Divide frosé evenly among 6 chilled glasses. Top glasses with Aperol for a little extra fun, if desired, and serve.

Frosé can be stored in an airtight container in the freezer up to 1 month. Strawberry simple syrup can be made up to 3 days in advance and stored in an airtight container in refrigerator.
